How to Cook Tuna

The key is: very high heat, very short time — sear the outside, leave the centre rare

Seared (Best): Thaw, pat dry, season with salt, pepper, sesame seeds. Very hot pan with oil. 1–2 min per side. Rest 2 min, slice against the grain.

Grilled: High heat, oiled grates. 1–2 min per side. Don't overcook — tuna is best rare to medium-rare.
