Suggested Preparation
Pulled Pork: Thaw fully in the fridge (24–48 hours). Pat dry and season generously with salt, pepper and a rub of your choice — smoked paprika, cumin, garlic and brown sugar work well. Place in a deep roasting tray with a cup of stock or apple juice, cover tightly with foil, and roast at 150°C for 6–8 hours until the internal temperature reaches 90°C+. Rest for 20–30 minutes then shred with two forks, mixing the cooking juices back through the meat. The longer you cook it, the better it gets — don't rush it.
Slow Roast (Sliceable): Season and roast uncovered at 160°C for 3–4 hours until internal temp reaches 75°C. Rest 20 minutes before slicing.
Slow Cooker: Season and cook on LOW for 8–10 hours or HIGH for 5–6 hours with a cup of liquid. Shred and serve.
