Suggested Preparation
Thaw fully in the fridge. Pat dry and season with salt and pepper. Sear over medium-high heat for 3–4 minutes per side to develop a good crust. Reduce heat slightly if needed and cook to an internal temperature of 63°C — a slight blush inside is ideal, juicy and safe. Rest for 3–5 minutes before serving. Don’t overcook — it’s the biggest mistake with pork. Works beautifully with apple sauce, mustard, a simple pan jus, or alongside roasted vegetables and mash.
