Suggested Preparation

Thaw overnight in the refrigerator. Pat dry and season with salt and pepper. Pan-sear over medium-high heat for 2–3 minutes per side to develop colour, then lower heat or transfer to the oven and cook to an internal temperature of 63°C. Rest for 5–8 minutes before slicing against the grain. A slight blush inside is perfect — do not overcook.
