Suggested Preparation

Thaw fully in the fridge overnight. Remove from the fridge 20 minutes before cooking. Pat dry and season generously with salt and pepper — or marinate in soy, garlic and ginger for an Asian-style result. Cook over medium-high heat for 3–4 minutes per side until the fat caramelises and the internal temperature reaches 65–68°C. A slight blush in the centre is perfectly safe and ideal. Rest for 3–5 minutes before serving. Don’t trim the fat — it’s where the flavour lives.
