Suggested Preparation

Slow Roast with Crackling: Thaw overnight in the fridge. Score the skin deeply at 1cm intervals, pat completely dry, rub generously with salt into the scores, and leave uncovered in the fridge for at least 2 hours (ideally overnight). Roast skin side up at 240°C for 25–30 minutes until the skin blisters, then reduce to 160°C for a further 1.5–2 hours. Rest 15 minutes before slicing. Dry skin is the single most important factor for crackling — don’t rush this step.

Asian-Style Braise: Cut into large cubes or strips. Braise in soy, rice wine, sugar, garlic and ginger over low heat for 1.5–2 hours until meltingly tender. Serve over steamed rice, in bao buns with pickled vegetables, or as a ramen topping.
