Suggested Preparation
Thaw in the refrigerator for 24–48 hours. Bring to room temperature for 45–60 minutes. Season generously with salt and pepper, rub with olive oil, garlic and fresh herbs. Sear all sides in a hot pan until well browned, then roast on a rack at 160–170°C. Use a meat thermometer — target 52–54°C for medium-rare. Allow 30–70 minutes depending on size. Rest for 15–20 minutes before carving against the grain. Serve with roasted potatoes, seasonal vegetables, and a red wine jus.
