Suggested Preparation
Thaw slowly in the refrigerator for 24–48 hours. For a roast, bring to room temperature, season generously with salt, pepper, and herbs, and roast at 200°C for 20 minutes then reduce to 160°C until your desired internal temperature is reached. Rest for at least 15 minutes before carving. For BBQ, slice thick and grill over high heat. For stir-fry, slice thinly against the grain and cook in a very hot wok.
