Suggested Preparation
Thaw overnight in the refrigerator. Bring to room temperature for 30–60 minutes before cooking. Season generously with coarse salt and cracked black pepper. Grill or sear in a very hot cast iron pan for 3–4 minutes each side for medium-rare. Add butter, garlic, and thyme in the final minute and baste continuously. Rest for 5 minutes before serving. A rib eye needs nothing more than a great pan and a little patience.
