Suggested Preparation
Thaw overnight in the refrigerator. Pat dry and season with salt and pepper. Sear in batches in a hot pan until deeply browned — do not skip this step. Add stock, aromatics, and your choice of sauce or spices. Cover and cook on low heat on the stovetop or in the oven at 150–160°C for 1.5–3 hours until fork-tender. Works beautifully in beef stew, slow-cooked curry, braised dishes, and casseroles. Even better the next day.
