How to cook:
- BBQ (recommended): Thaw overnight. Cook bone-side down over medium heat for 20–25 minutes, then flip skin-side down for 10–15 minutes until skin is golden and juices run clear
- Oven roast: Roast at 200°C skin-side up for 35–40 minutes. Rest for 10 minutes before carving
- Grill pan: Sear skin-side down over high heat for 5 minutes, then finish in the oven at 190°C for 25–30 minutes
