Suggested Preparation

Thaw overnight in the refrigerator — never cook from frozen. Cook low and slow: BBQ or grill over medium heat for 12–15 minutes, turning every 2–3 minutes. Alternatively, pan-fry over medium-low heat with a little oil for 12–15 minutes, or oven-bake at 180°C for 20–25 minutes turning halfway. Do not pierce the casing. Rest for 2 minutes before serving. Serve classic with Dijon mustard and crusty bread, in a toastie with extra caramelised onion, or as bangers and mash with onion gravy.
