Suggested Preparation

Thaw overnight in the refrigerator. Bring to room temperature for 15–20 minutes. Season generously with salt and pepper just before cooking. Cook on a very hot cast iron skillet or BBQ grill for 3–4 minutes per side — flip once only, never press down. Target 60–63°C internal for medium — the sweet spot where Wagyu fat renders fully. Rest for 2–3 minutes before building. Serve on a toasted brioche bun and keep toppings simple — let the Wagyu speak.
