How to Cook Hokkaido Scallops
The key is: very high heat, very short time — sear or eat raw
Sashimi (Best): Thaw slowly in fridge. Slice thinly. Serve with soy, wasabi and lemon.
Seared: Pat completely dry. Very hot pan with oil. 1 min per side max. Finish with butter and lemon.
