Suggested Preparation

Score the skin in a crosshatch pattern, taking care not to cut into the flesh. Season generously with salt and leave uncovered in the fridge for 30 minutes to dry the skin. Place skin-side down in a cold, dry pan — then bring to medium heat. Render the fat slowly for 10–12 minutes until the skin is deeply golden and crisp. Flip and cook for a further 3–4 minutes for medium. Rest for 5 minutes before slicing. The rendered duck fat left in the pan is liquid gold — save it for roasting potatoes.
