Suggested Preparation

Thaw fully in the fridge (24–48 hours). Pat the skin completely dry, score in parallel lines 1cm apart, and rub generously with salt — leave uncovered in the fridge overnight for best crackling. Before roasting, bring to room temperature for 30–45 minutes. Blast at 240°C for 20–25 minutes to crackle the skin, then reduce to 180°C and roast until internal temperature reaches 63°C (40–50 min for 1220g, 50–60 min for 1450g, 80–95 min for 2330g). Rest uncovered for 15–20 minutes — do not cover with foil or the crackling will soften. Serve carved at the table with apple sauce, roasted potatoes and steamed greens.
