Suggested Preparation

Thaw fully in the fridge. Remove from fridge 20–30 minutes before cooking. Pat dry, season generously with salt and pepper, and optionally brush with olive oil and fresh rosemary. Cook on a high heat pan or BBQ for 2–3 minutes per side for medium rare (55–58°C), or 3–4 minutes for medium. Press the fat edge down for 1 minute to render and crisp. Rest for 3–5 minutes before serving — don’t skip this step. Simple seasoning is best — let the lamb flavour shine.
