Suggested Preparation
Thaw in the refrigerator for 24–48 hours. Pat dry and season generously. Sear all sides in a heavy Dutch oven over high heat until deeply browned — do not skip this step. Add aromatics (onion, garlic, carrot, celery), herbs, and enough beef stock and red wine to cover one-third of the roast. Cover and cook at 150–160°C for 3–4.5 hours until completely fork-tender. Rest 15 minutes before carving or pulling. Reduce the braising liquid into a rich sauce.
