How to Roast a Whole Chicken
The key is: high heat to start, then lower to finish
Roast (Best): Thaw fully, pat dry, season generously inside and out. Preheat oven to 220°C. Roast 20 min to start crisping the skin. Reduce to 180°C and roast a further 45–60 min depending on size, until juices run clear and internal temp reaches 74°C. Rest 10–15 min before carving.
