Suggested Preparation
Remove from freezer and thaw overnight in the refrigerator. Bring to room temperature before cooking. Rub generously with olive oil, garlic, rosemary, and sea salt. Roast at 200°C for 20 minutes to seal, then reduce to 180°C and cook to your preferred doneness. Rest for 15 minutes before carving.
