Suggested Preparation

Thaw slowly in the refrigerator for 24 hours. Bring to room temperature for 30 minutes before cooking. Season simply with flaked sea salt — the Wagyu marbling provides all the flavour needed. Sear in a dry cast iron pan over medium-high heat for 3–4 minutes each side for medium-rare. Rest for 5 minutes before serving. Avoid overcooking — Wagyu is best enjoyed at medium-rare to medium.
