Suggested Preparation

Thaw slowly in the refrigerator for 24–48 hours. Bring to room temperature for 1 hour before cooking. Season simply with flaked sea salt only — the marbling provides all the flavour needed. Cook in a dry cast iron pan over medium-high heat for 2–3 minutes each side for medium-rare. Do not overcook — M9 Wagyu is best enjoyed at medium-rare to medium. Rest for 5 minutes. Slice thinly against the grain and serve simply.
