Suggested Preparation

Thaw slowly in the refrigerator for 24 hours. Bring to room temperature for 30 minutes before cooking. Season simply with flaked sea salt — the Wagyu marbling does the rest. Cook in a dry cast iron pan over medium-high heat for 3–4 minutes each side for medium-rare. Baste with a little butter and thyme in the final minute. Rest for 5 minutes before serving. Do not overcook — Wagyu ribeye is best at medium-rare to medium.
