Suggested Preparation

Thaw overnight in the refrigerator. Bring to room temperature before cooking. Season generously with garlic, rosemary, and Dijon mustard. Roast at 200°C for 15–20 minutes for a perfect medium-rare. Rest for 10 minutes before carving between the bones.
